Foodie Friday: Easy Chicken Taco Salad

I love tacos and taco salads, but sometimes I just don’t feel like making them from scratch. It’s not that it’s hard, because it really isn’t, but more than it can be time consuming especially on a night when you get home from work late, your spouse is at a meeting and you don’t feel like cooking.

In comes the easy chicken taco salad. It’s easy because it’s mostly pre-made and only requires a little prep time. Here’s the recipe:

Easy Gluten Free Chicken Taco Salad

  • Tortilla chips (I like the Simply Balanced Organic White Corn Tortilla Chips sold at Target)
  • Frozen or refrigerated pre-cooked chicken strips (I usually use Purdue or Tyson, whatever is on sale)
  • Lettuce
  • 1 Small Tomato
  • 1 tbsp Taco seasoning (I use Ortega. I’ve tried Old El Paso, store brands and making my own, but none of them compare to Ortega. It really is the best tasting taco seasoning out there)
  • Shredded cheese

Instructions:

  • 20150409_200250Heat chicken in a skillet on the stove top according to the instructions on the bag. It can also be microwaved, but it comes out much better in the skillet. Add taco seasoning.
  • Chop tomato and lettuce separately. Set aside in separate bowls. Use bowls with lids for easy fridge storage because you’ll likely have leftovers.
  • Put tortilla chips on a plate. Cover with heated chicken. Add shredded cheese, lettuce and tomato.
  • Eat!

See? Super easy. It’ll likely only take 10-20 minutes depending on if your chicken is refrigerated or frozen. I often buy the refrigerated bags of chicken strips when they’re on sale and store them in the freezer until I need them. Besides a taco salad, you can use them for quesadillas, regular salads and more so they really come in handy. Plus, if you have a Harris Teeter, the Purdue version is often on sale, plus Harris Teeter doubles coupons up to $.99 so you can really end up getting them super cheap, which I love.
