I love tacos and taco salads, but sometimes I just don’t feel like making them from scratch. It’s not that it’s hard, because it really isn’t, but more than it can be time consuming especially on a night when you get home from work late, your spouse is at a meeting and you don’t feel like cooking.
In comes the easy chicken taco salad. It’s easy because it’s mostly pre-made and only requires a little prep time. Here’s the recipe:

See? Super easy. It’ll likely only take 10-20 minutes depending on if your chicken is refrigerated or frozen. I often buy the refrigerated bags of chicken strips when they’re on sale and store them in the freezer until I need them. Besides a taco salad, you can use them for quesadillas, regular salads and more so they really come in handy. Plus, if you have a Harris Teeter, the Purdue version is often on sale, plus Harris Teeter doubles coupons up to $.99 so you can really end up getting them super cheap, which I love.
